Massaged Kale Salad with Radishes and Cucumbers
1 bunch green kale, washed
5 radishes, washed and sliced
1 cucumber, peeled and sliced
1/4 cup Basic Salad Dressing
salt and pepper
This should be a given for all recipes, but for this recipe it is especially important; before preparing your salad, wash your hands.
Remove the kale leaves from the stems. You won’t be using the stems for this dish, but you can juice them or add them to your compost heap. Tear the leaves into bite-sized pieces and massage them for a few minutes until they soften. A quick massage is really the trick to transforming these tough leaves into a tasty salad. You’re breaking down the cell walls, releasing the flavorful juices that would otherwise stay trapped inside and making the salad much easier to chew and digest.
