Collagen-Powered Coconut Pie
1 can full fat coconut milk
1 Tbsp vanilla
2 Tbsp grass-fed gelatin (I like Great Lakes in the red can)
Vitamix on High until the mixture starts to steam. Add the gelatin and process for another 30 seconds. Pour the mixture into your pie crust and place in the refrigerator for an hour and a half. Top with shredded coconut before serving.
